One of my favorite breakfast items is a sandwich using English muffins or bagels. The options and variations for fillings are endless! Here’s a tasty version I whipped up recently using smoked sausage. Ham is always good, as well as bacon. Get creative and come up with your own preferences! Consider baby spinach, roasted peppers, smoked Gouda, chicken and more.
And it’s nice that in most cases you can knock this out using only one pan! If you haven’t already, invest in a single, nice ceramic coated skillet at least 12″. Admittedly, the skillet I am using in the video is one of those “copper” style you see most everywhere, and it’s about to be thrown out! You truly get what you pay for, but the good news is that you can acquire some quite impressive cookware at buyout stores for incredible prices.
Keep your heat on medium to medium low, and let the pan cool down a bit before cracking the egg into it. With a little practice you can whip a couple of these up in no time. Make one the night before and you’ll have quite a tasty treat at work the next morning. Enjoy!
